Spinach



Every night I put on Karissa's plate the veggie that we're having with our dinner. Usually a piece of broccoli or a green bean. Yet, every night she does not even touch it, despite my attempts to encourage her to eat it. Once in a while when we have peas she will a few of them frozen, but never cooked. She does like raw cucumbers, carrots, and peppers, but we can't do overkill around here. If offer those to her too often, she will refuse them and then she will not eat any veggies! So this week, when I was eating my spinach salad she wanted to eat it with me! It happened not only once, but twice! She didn't eat just a little either. She ate enough for me to have to make more! I guess spinach salad is raw like the other veggies she likes, but I just never thought my two-year-old would like salad! I never even liked it until I was a teenager. Of course Victoria won't touch it, but notice in one of the pictures, her hand is reaching for a cucumber in the salad. Luckily, Victoria is a good eater now and always eats her veggies, though I do salt and pepper them, which I know that's better than the norm (cooked with butter), but I never cared about salt and pepper on my veggies. At least I only have to add salt and pepper to her food to get her to eat now. Jason used to only eat Baco sandwiches; made with Baco bits, mayo, and on white bread. UGHHH! Poor Kay!

  1. I love Victoria's orange ring in that shot where she's reaching for the cucumber. Too cute. And Baco sandwiches- that has got to be the grossest thing ever!! :)

  2. Val - you're so healthy and you're teaching your girls to have great eating habits! (Consider your back patted - from one mom to another :0) My kids love spinach salad too. I made a yummy one a couple of months ago. I had Ella up on the counter helping me and she was grabbing fist-fulls out of the mixing bowl as quick as I could get the ingredients mixed together!

    It's always exciting when kids decide that eating their veggies isn't going to kill them!
